The lead into the 2016 vintage was dryer than yesterdays toast, which again brought flowering on earlier than the long term average. The new year brought some cooling rains which slowed ripening during the late summer months. A little more difficult to manage than the 2015 vintage, and perhaps not as stand out, but a vintage that produced solid quality red wines.
For us ‘Sfera Black’ is our show piece - the best of what we can produced. Each row is walked to look for the best fruit we grow. An attempt to reproduce the best flavours in the vineyard, and show off to the world what we do!
Small batch fermented with twice daily punching down, before pressing off skins on day 6. A mix of stainless and new oak matuation - fruit not to be dominated!
