A moderately warm and early spring brought flowering on earlier than the long term average. Gentle slow ripening from summer months without extreme heat allowed for gradual ripening of tannins while retaining high levels of natural acidity in the fruit.
The fruit from the 2015 ‘Sfera’ Dolcetto was harvested from our Block 6. Slightly lower vigour than our Block 9 Dolcetto. Machine harvested at night to retain freshness, before haulage to the winery.
After bleeding some juice for rosé we were left with lower juice to skin ratio, resulting in a darker than atypical Dolcetto. More savoury than one might expect.
This peculiar wine sets a new style for savoury Australian Dolcetto. The colour sets the tone with this wine, double skin contact builds the silky tannin line. Savoury - not sweet with bright cherry tones and a hint of lavender. Licorice strap and dark chocolate keep the palate on the savoury line
Pair with a rich tomato based Ragout or lamb rack.
